How to choose and maintain it

* Choose the roots that are as smooth as possible, wrinkle-free and tough, even in color. Conversely, if the root is soft, wrinkled or of a different color it means that it is not fresh.

* Store in the refrigerator for about three weeks. To extend its freshness, wrap it in a plastic film and then place it in the refrigerator.
